Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel, core, and slice 6 medium apples into 1/4-inch thick slices. Toss them in a bowl with 1 tablespoon of fresh lemon juice, 1/2 cup granulated sugar, 1/3 cup brown sugar, and 2 teaspoons ground cinnamon. Mix gently until the apples are evenly coated.
  3. Transfer the apple mixture to your cast iron skillet and spread evenly.
  4. In a separate bowl, combine 3/4 cup all-purpose flour, 3/4 cup rolled oats, 1/3 cup brown sugar, and 1/4 teaspoon salt. Add 1/2 cup cold, cubed unsalted butter. Using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces.
  5. Sprinkle the topping evenly over the apples.
  6. Bake in the preheated oven for 40 to 45 minutes, or until the topping is golden brown and the apples are bubbling at the edges. If the topping browns too fast, loosely cover the skillet with foil halfway through baking.
  7. Let the apple crisp rest for about 10 minutes before serving to allow the juices to thicken.
