These no-bake peanut butter oat lunchbox bars are chewy, sturdy, and just sweet enough. Made with simple pantry ingredients, they hold together perfectly in lunchboxes and are a crowd-pleasing snack for kids and adults alike.

  • 2 cups (180g) rolled oats (old-fashioned oats)
  • 1 cup (240g) creamy peanut butter (e.g., Jif or Skippy)
  • ½ cup (170g) honey
  • ¼ cup (57g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup (60g) mini chocolate chips (optional)

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving about 2 inches of overhang on two opposite sides. Set aside.
  2. In a small saucepan over low heat, combine 1 cup creamy peanut butter, ½ cup honey, and ¼ cup unsalted butter. Stir constantly until melted and smooth, about 3-4 minutes.
  3. Remove from heat and stir in 1 teaspoon vanilla extract and ¼ teaspoon salt.
  4. In a large mixing bowl, place 2 cups rolled oats. Pour the warm peanut butter mixture over the oats and stir until fully combined. If using, fold in ½ cup mini chocolate chips.
  5. Transfer the mixture to the prepared pan. Using a spatula or lightly greased hands, press the mixture firmly and evenly into the pan. Use the bottom of a measuring cup to pack it down tightly.
  6. Refrigerate for at least 2 hours, or until completely firm. For best results, chill overnight.
  7. Lift the block out of the pan using the parchment paper handles. Place on a cutting board and cut into 12 even bars with a sharp knife.

Notes

Press the mixture firmly into the pan to prevent crumbling. For cleaner cuts, chill overnight. If bars are too sticky to cut, refrigerate for 15 more minutes. For a vegan version, replace honey with maple syrup and butter with coconut oil. For gluten-free, use certified gluten-free rolled oats. For nut-free, use sunflower seed butter.
