  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons capers
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper, to taste
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the capellini according to the package instructions (usually 3-4 minutes). Drain and set aside.
  2. While the pasta cooks, prepare the dressing. In a small bowl, whisk together the lemon juice, lemon zest, olive oil, and minced garlic. Add a pinch of salt and black pepper to taste.
  3. Transfer the drained pasta to a large mixing bowl. Pour the dressing over the pasta and toss gently to coat the strands evenly.
  4. Stir in the capers, chopped parsley, and Parmesan cheese (if using). Toss again to combine.
  5. Taste and adjust seasoning if needed—add more salt, pepper, or lemon juice based on your preference.
  6. Serve immediately if you prefer warm pasta, or let it cool to room temperature for a refreshing salad. You can also refrigerate it for an hour if you’d like to serve it chilled.

Notes

Toss the pasta with the dressing while it’s still warm to help the flavors meld. If the pasta seems dry after chilling, add a drizzle of olive oil and toss gently to revive its texture.
