  • 68 cherry tomatoes, halved
  • A pinch of red pepper flakes (optional)

  • A small handful fresh cilantro or parsley, chopped
  • Optional: 1 soft boiled egg or crumbled feta cheese

Instructions

  1. Toast the bread slices in a toaster or grill pan until golden brown and crisp, about 3-5 minutes.
  2. While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a mixing bowl.
  3. Add fresh lime juice, sea salt, and black pepper to the avocado and mash with a fork to a slightly chunky consistency.
  4. Heat a small dry skillet over medium-low heat and toast the pumpkin seeds, stirring frequently until lightly browned and fragrant, about 3 minutes. Remove from heat.
  5. Spread the mashed avocado evenly over the toasted bread slices.
  6. Drizzle extra virgin olive oil over each slice.
  7. Scatter halved cherry tomatoes on top, then sprinkle toasted pumpkin seeds and hemp seeds evenly.
  8. Add a pinch of red pepper flakes if desired.
