  • 1/2 cup (113g) unsalted butter, softened
  • 1 cup (200g) packed brown sugar
  • 1/4 cup (60ml) light corn syrup
  • 1/2 cup (120ml) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup (170g) semi-sweet or milk chocolate chips
  • Pinch of coarse sea salt (optional)
  • Optional add-ins: chopped nuts or toffee bits

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Arrange the soft pretzels in a single layer on the baking sheet, spacing them out slightly to form the ‘goal post’ base.
  3. In a medium saucepan over medium heat, combine the unsalted butter, brown sugar, light corn syrup, and sweetened condensed milk. Stir constantly with a heatproof spatula until the mixture comes to a gentle boil.
  4. Let the caramel boil for exactly 3 minutes, stirring continuously until it thickens and turns a rich golden color.
  5. Remove the saucepan from heat and stir in the vanilla extract.
  6. Carefully spoon the hot caramel evenly over each pretzel, fully coating them but not drowning them in caramel.
  7. Bake the pretzels in the preheated oven for 7-9 minutes until the caramel bubbles slightly and sets but does not burn.
  8. Remove from oven and let the pretzels cool on the baking sheet for about 5 minutes to firm up while remaining chewy.
  9. Melt the chocolate chips in a microwave-safe bowl in 30-second increments, stirring between each, or use a double boiler until smooth.
  10. Drizzle the melted chocolate over the caramel-covered pretzels using a spoon or piping bag. Sprinkle a pinch of coarse sea salt on top if desired.
  11. Allow the chocolate to set completely at room temperature or refrigerate for 10-15 minutes.
  12. Serve and enjoy fresh, or store as directed.

Notes

If caramel hardens while spooning, gently warm it over low heat to loosen. Stir caramel constantly and boil exactly 3 minutes for perfect chewiness. Use short bursts when melting chocolate to avoid seizing. Room temperature butter and pretzels improve coating and baking results. Store in airtight container at room temperature up to 3 days or freeze up to 2 months.
