These Buffalo chicken dip stuffed bread bites are the ultimate party appetizer—creamy, spicy Buffalo chicken filling wrapped in buttery biscuit dough and baked until golden. They solve the chip-to-dip ratio problem by combining the dip and the vehicle in one perfect bite.

Ingredients

Scale
  • 2 cups cooked shredded chicken (rotisserie chicken recommended)
  • 8 ounces cream cheese, softened to room temperature
  • ½ cup Buffalo hot sauce (Frank’s RedHot recommended)
  • ¼ cup ranch dressing
  • 1 cup shredded cheddar cheese, divided
  • 1 can (16.3 ounces) refrigerated biscuit dough (8 biscuits, Pillsbury Grands recommended)
  • 3 tablespoons unsalted butter, melted
  • ½ teaspoon garlic powder
  • ¼ cup blue cheese crumbles (optional, for garnish)
  • 23 green onions, sliced thin (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
  2. Make the Buffalo chicken filling: In a large mixing bowl, combine shredded chicken, softened cream cheese, Buffalo hot sauce, ranch dressing, and ½ cup of shredded cheddar cheese. Stir until well combined and creamy, with no white streaks remaining. If cream cheese is still cold, microwave the mixture for 15-20 seconds to help it come together.
  3. Open the can of refrigerated biscuits and separate the 8 biscuits. Place them on a clean work surface and flatten each biscuit into a 4-inch circle using your fingers or a rolling pin.
  4. Spoon about 2 tablespoons of the Buffalo chicken filling into the center of each flattened biscuit. Do not overfill.
  5. Gently gather the edges of the biscuit dough up and over the filling, pinching them together at the top to seal. Ensure there are no gaps or openings. Place each sealed bite seam-side down on the prepared baking sheet, spacing them about 2 inches apart.
  6. In a small bowl, mix the melted butter with garlic powder. Brush the tops of each bread bite generously with the garlic butter mixture.
  7. Sprinkle the remaining ½ cup of shredded cheddar cheese over the tops of the buttered bread bites.
  8. Bake for 12-15 minutes, or until the bread bites are golden brown and the cheese on top is bubbly and slightly crisp around the edges. The filling should be hot all the way through.
  9. Remove from the oven and let the bread bites cool on the baking sheet for 5 minutes. This step is crucial to prevent burning your mouth on the hot filling.
  10. After 5 minutes, transfer to a serving platter, sprinkle with blue cheese crumbles and sliced green onions, and serve warm.

Notes

Let cream cheese come to room temperature for about 30 minutes before starting. Don’t overwork the biscuit dough—handle gently to keep it tender. Seal the dough tightly to prevent filling leaks. Let the bites rest for 5 minutes after baking to avoid burning your mouth. For make-ahead: assemble up to 24 hours in advance and refrigerate; add 2-3 minutes to baking time. For freezing: freeze baked and cooled bites for up to 2 months; reheat at 375°F (190°C) for 15-18 minutes from frozen.
