  • 3 pounds bone-in beef short ribs, trimmed of excess fat
  • 1/2 cup low sodium soy sauce
  • 1/4 cup packed brown sugar
  • 2 tablespoons fresh ginger, finely grated
  • 4 cloves garlic, minced
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 3 stalks green onions, sliced thinly
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup water or beef broth

Instructions

  1. Pat dry 3 pounds of beef short ribs with paper towels. Trim excess fat but leave enough for flavor. Season lightly with salt and pepper.
  2. In a medium bowl, whisk together soy sauce, brown sugar, grated fresh ginger, minced garlic, rice vinegar, toasted sesame oil, and red pepper flakes if using.
  3. Place the ribs bone-side down in a single layer in the slow cooker. Stack gently if needed but avoid overcrowding.
  4. Pour the ginger soy glaze evenly over the ribs, then add water or beef broth to come about halfway up the ribs.
  5. Cover and cook on low for 7 to 8 hours, or until ribs are tender and falling off the bone. Optionally, baste ribs halfway through cooking with sauce using tongs.
  6. About 15 minutes before serving, remove ribs and place on a foil-lined baking sheet. Spoon some glaze over the top and broil for 5 minutes to caramelize slightly (optional).
  7. Sprinkle sliced green onions over ribs and serve immediately with steamed rice or your favorite sides.

Notes

If glaze is too thin after cooking, simmer it in a saucepan over medium heat for 5-7 minutes until thickened. Broiling ribs at the end adds a nice caramelized texture. Use fresh ginger for best flavor. For gluten-free, substitute tamari for soy sauce and check broth labels.
