Tender Slow Cooker Glazed Carrots

Sweet, buttery glazed carrots cooked to tender perfection in a slow cooker. A comforting and easy side dish for any occasion.

  • 2 pounds carrots, peeled and cut into chunks or baby carrots
  • 4 tablespoons unsalted butter, melted
  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • 1/4 cup water

Instructions

  1. Peel and cut the carrots into equal-sized chunks, around 2-3 inches long. If using baby carrots, rinse and pat them dry.
  2. In a mixing bowl, combine melted butter, brown sugar, honey, cinnamon, salt, and pepper. Whisk until smooth.
  3. Place the carrots in the slow cooker, pour the glaze over them, and toss gently to coat each piece evenly.
  4. Add the water to the slow cooker, cover, and cook on low for 6-8 hours or on high for 3-4 hours. Stir once or twice during cooking for even glazing.
  5. Check for doneness. The carrots should be fork-tender but not mushy. If needed, cook for an additional 30 minutes on high.
  6. Transfer the glazed carrots to a serving dish and drizzle any remaining glaze over them. Garnish with fresh parsley or thyme if desired.

Notes

For a thicker glaze, remove the lid during the last 20-30 minutes of cooking. Fresh herbs like parsley or thyme can be added for garnish.
