A quick and easy campfire dinner featuring tender steak and golden potatoes cooked in foil packets, perfect for outdoor meals and camping trips.

  • 1 pound sirloin or ribeye steak, cut into bite-sized strips
  • 2 medium Yukon Gold or red potatoes, diced into ½-inch cubes
  • ½ medium yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)
  • 1 tablespoon butter, cut into small pieces (optional)

Instructions

  1. Wash and dice the potatoes into ½-inch cubes. Slice the onion thinly and mince the garlic. Cut the steak into bite-sized strips about 1 inch pieces.
  2. In a mixing bowl, toss the diced potatoes with 1 tablespoon olive oil, smoked paprika, dried thyme, half the minced garlic, salt, and pepper until evenly coated.
  3. Toss the steak pieces with the remaining olive oil, garlic, salt, and pepper. Optionally add a squeeze of lemon juice or Worcestershire sauce.
  4. Tear off four large sheets of heavy-duty foil (about 12×12 inches each). Divide the potatoes evenly among the packets, place in the center, layer sliced onions over the potatoes, then add steak strips on top. Dot each packet with a small piece of butter if using.
  5. Fold the foil over the ingredients and crimp the edges tightly to form sealed packets, ensuring no gaps to keep steam inside.
  6. Place the packets on hot coals or grill grates. Cook for about 7-10 minutes per side, turning once halfway through.
  7. After 15 minutes, carefully open one packet to check potatoes for fork tenderness and steak for doneness. If needed, reseal and cook a few more minutes.
  8. Garnish with fresh parsley and serve immediately, being careful of hot steam when opening packets.

Notes

Use fresh or thawed potatoes for even cooking. Double-wrap foil if needed to prevent leaks. Open packets carefully to avoid steam burns. Adjust cooking times if using an oven or gas grill. For a vegetarian version, substitute steak with portobello mushrooms or tofu.
