  • 2 cups beef broth
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 68 French rolls or hoagie buns
  • 68 slices provolone or Swiss cheese (optional)

Instructions

  1. Trim any excess fat from the beef chuck roast, leaving some marbling for flavor. Pat dry with paper towels to promote browning (optional).
  2. Thinly slice one large onion and mince three garlic cloves.
  3. Place the sliced onions evenly at the bottom of the slow cooker. Set the roast on top, then sprinkle minced garlic over the beef. Season generously with salt, black pepper, and dried thyme.
  4. Pour 2 cups (480 ml) of beef broth around the roast (not directly over to avoid washing off seasoning). Add 2 tablespoons Worcestershire sauce.
  5. Cover and set the slow cooker to low for 8 hours or high for 4-5 hours until the roast is fork-tender and easy to shred. Avoid lifting the lid during cooking.
  6. Remove the roast to a plate and shred with two forks, discarding any large fat pieces. Keep the onions and juices in the slow cooker for dipping.
  7. If desired, transfer the cooking liquid to a saucepan and simmer until reduced to your liking for thicker au jus. Otherwise, serve as is.
  8. Slice French rolls or hoagie buns and layer generously with shredded beef and optional cheese slices. Toast briefly under a broiler if melted cheese and a crisp top are preferred.
  9. Serve sandwiches warm with small bowls of warm au jus for dipping.

Notes

For thicker au jus, reduce the cooking liquid in a saucepan. Use gluten-free rolls and Worcestershire sauce for a gluten-free version. Avoid lifting the slow cooker lid during cooking to maintain temperature. Cheese is optional and can be melted under a broiler. Leftovers improve in flavor after a day and can be stored separately in the fridge for up to 4 days.
