A tender and flavorful slow-cooked corned beef and cabbage recipe infused with Guinness stout, perfect for St. Patrick’s Day or cozy family meals.

Ingredients

Scale
  • 34 pounds corned beef brisket (with seasoning packet included)
  • 12 oz Guinness stout beer (or any dark stout)
  • 2 cups beef broth
  • 4 large carrots, peeled and cut into chunks
  • 6 medium yellow potatoes, quartered
  • 1 medium green cabbage, cut into wedges
  • 1 large onion, peeled and quartered
  • 4 cloves garlic, smashed
  • 2 whole bay leaves
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon mustard seeds (optional)
  • A handful fresh parsley, chopped for garnish

Instructions

  1. Rinse the corned beef brisket under cold water to remove excess brine and pat dry with paper towels.
  2. Place the brisket in the crockpot fat side up.
  3. Sprinkle the seasoning packet over the meat, then add bay leaves, peppercorns, and mustard seeds around the meat.
  4. Pour in Guinness stout and beef broth, ensuring liquids come about halfway up the meat; add water if needed.
  5. Add quartered onion and smashed garlic cloves around the brisket.
  6. Cover and cook on low for 8-10 hours or on high for 4-6 hours until meat is fork-tender.
  7. 1-2 hours before the meat is done, add carrots and quartered potatoes around the brisket.
  8. After 30 minutes, add cabbage wedges on top, cover, and cook until vegetables are tender but not mushy.
  9. Check for doneness; transfer brisket to a cutting board and let rest for 10 minutes before slicing against the grain.
  10. Arrange sliced corned beef on a platter with cooked vegetables, spoon Guinness broth over, and garnish with chopped parsley.

Notes

Rinse the brisket to reduce saltiness. Avoid opening the lid during cooking to maintain heat. Add vegetables later to prevent overcooking, especially cabbage. Slice meat against the grain for tenderness. Use a meat thermometer to check for an internal temperature of about 190°F (88°C). Broth can be reduced on the stove if too thin.
