  • Salt and pepper, for seasoning
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth (preferably low sodium)
  • 2 tablespoons tomato paste
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon mustard powder
  • 1 cup BBQ sauce (your favorite brand or homemade)
  • 12 small slider buns (brioche recommended)
  • Optional toppings: pickles, coleslaw, sliced jalapeños

Instructions

  1. Pat the brisket dry with paper towels and season all sides generously with salt and pepper (about 5 minutes).
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear the brisket on each side until browned, about 4-5 minutes per side (20 minutes total).
  3. Remove brisket and set aside. In the same pot, sauté chopped onion and garlic until softened and fragrant, about 3-4 minutes (5 minutes).
  4. Stir in tomato paste, beef broth, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, chili powder, and mustard powder. Mix well, scraping up browned bits (3 minutes).
  5. Return brisket to pot, nestle into liquid, cover with lid, reduce heat to low, and braise gently for 2.5 to 3 hours, flipping halfway through, until fork-tender.
  6. Remove brisket and let rest for 10 minutes. Shred meat with two forks, discarding large fat chunks (10 minutes).
  7. Transfer shredded brisket to a bowl and stir in BBQ sauce until well coated. Adjust seasoning if needed (5 minutes).
  8. Lightly toast slider buns on a baking sheet or griddle until golden. Assemble sliders by piling brisket on buns and adding optional toppings (10 minutes).

Notes

If brisket isn’t shredding easily, cook longer at low heat. Resting the meat for 10 minutes after cooking helps retain moisture. For gluten-free, use gluten-free buns or lettuce wraps. Slow cooker method: brown brisket and aromatics, then cook on low for 6-8 hours.
