  • 1 cup (120 g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 cup (240 ml) heavy cream, cold
  • 1 ½ cups (150 g) graham cracker crumbs
  • 6 tablespoons (85 g) unsalted butter, melted
  • 2 tablespoons (25 g) granulated sugar (optional)
  • Gel food coloring in blue, purple, pink, and black
  • A few drops of edible shimmer powder or luster dust (optional)

Instructions

  1. Make the crust: Combine graham cracker crumbs, melted butter, and sugar in a medium bowl. Press firmly into the bottom of an 8×8-inch pan lined with parchment paper. Chill in the fridge for about 10 minutes.
  2. Prepare the cream cheese filling: Beat softened cream cheese with powdered sugar until smooth, about 2-3 minutes. Add vanilla extract and lemon juice and mix well.
  3. Whip the heavy cream to soft peaks using a hand mixer, about 3-5 minutes.
  4. Gently fold the whipped cream into the cream cheese mixture using a spatula, keeping the mixture airy.
  5. Divide the filling into 3-4 small bowls and add gel food coloring to each (blue, purple, pink, black). Stir lightly to create vibrant but swirled colors.
  6. Spoon dollops of each colored filling randomly over the chilled crust. Use a toothpick or skewer to swirl the colors gently, creating a galaxy pattern.
  7. Optionally, dust edible shimmer powder over the top for a cosmic sparkle.
  8. Cover the pan with plastic wrap and refrigerate for at least 4 hours or overnight to set.
  9. Use a sharp knife warmed in hot water and wiped dry to cut into 12 squares before serving.

Notes

Use gel food coloring for best swirl effect and texture. Do not overwhip cream. Keep cream cheese at room temperature to avoid lumps. Use a warm knife for clean cutting. Chill at least 4 hours or overnight for best results. Variations include dairy-free and gluten-free substitutions.
