  • 1 ripe mango, peeled and chopped
  • 12 fresh habanero peppers, finely minced (adjust to heat preference)
  • 2 tablespoons honey
  • Juice of 1 lime
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon smoked paprika
  • Optional garnish: fresh cilantro or chopped green onions

Instructions

  1. Pat the chicken wings dry with paper towels to help them crisp up. Season generously with salt, black pepper, and smoked paprika. Toss them in 1 tablespoon of olive oil to coat evenly.
  2. Place a wire rack on a rimmed baking sheet and arrange wings in a single layer without overcrowding.
  3. Preheat oven to 425°F (220°C). Bake wings for about 20 minutes, then flip and bake for another 20-25 minutes until golden brown and crisp. Check internal temperature reaches 165°F (74°C) if using a thermometer.
  4. While wings bake, combine chopped mango, minced habaneros, honey, lime juice, garlic, soy sauce, apple cider vinegar, and remaining 1 tablespoon olive oil in a blender or food processor. Blend until smooth. Adjust sweetness or heat as desired.
  5. Transfer baked wings to a large bowl. Pour mango habanero sauce over and toss gently but thoroughly to coat each wing.
  6. Serve immediately, garnished with chopped cilantro or green onions if desired.

Notes

Dry wings thoroughly before seasoning for crispiness. Adjust habanero quantity to control heat. Toss wings in sauce just before serving to keep skin crisp. Broil for last 2-3 minutes per side for extra crispiness. Sauce can be made a day ahead and stored refrigerated.
