  • 1 tbsp sugar
  • 1 tsp salt
  • 8 oz imitation crab (or real crab meat)
  • 2 tbsp mayonnaise
  • 1 tbsp sriracha
  • 1 tsp toasted sesame oil
  • 1 avocado, diced
  • 1 cucumber, sliced or julienned
  • 1/4 cup shredded carrots
  • 2 scallions, thinly sliced
  • Soy sauce or tamari (optional)
  • Sesame seeds (optional)
  • Pickled ginger (optional)
  • Nori sheets, cut into strips (optional)

Instructions

  1. Cook the sushi rice according to package instructions or using a rice cooker. Mix in rice vinegar, sugar, and salt while the rice is warm. Let cool.
  2. Prepare the spicy crab mixture by combining imitation crab, mayonnaise, sriracha, and sesame oil in a bowl. Mix until creamy and adjust spice level to taste.
  3. Dice the avocado, slice the cucumber, shred the carrots, and chop the scallions. Set aside each topping in individual bowls.
  4. Assemble the bowls by layering sushi rice at the bottom, adding the spicy crab mixture, and topping with avocado, cucumber, carrots, and scallions.
  5. Add optional garnishes like soy sauce, sesame seeds, pickled ginger, or nori strips for extra flavor.
