  • 1 cup (227 grams) unsalted butter, softened
  • 2 cups (400 grams) granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (240 ml) whole milk
  • ½ cup (120 grams) small-curd cottage cheese, well drained
  • 2 cups (480 ml) heavy whipping cream, chilled
  • ½ cup (60 grams) powdered sugar
  • 1 teaspoon vanilla extract
  • About 2 cups (300 grams) fresh strawberries, sliced
  • 1 ½ cups (225 grams) fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round pans or line them with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter with granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Blend cottage cheese into the batter until smooth. Alternate adding dry ingredients and milk in three additions, starting and ending with dry ingredients. Mix gently just until combined.
  6. Divide batter evenly among the three pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Rotate pans halfway through baking if needed.
  7. Let cakes rest in pans for 10 minutes, then transfer to cooling racks for at least 30 minutes until completely cooled.
  8. Chill mixing bowl and beaters for 15 minutes. Beat heavy cream with powdered sugar and vanilla extract on high speed until stiff peaks form.
  9. Place one cake layer on a serving plate. Spread a thin layer of whipped cream. Arrange sliced strawberries on half of the layer to mimic flag stripes.
  10. Add the second cake layer on top. Spread whipped cream and place blueberries in the top-left corner area to represent the stars field.
  11. Finish with the last cake layer and frost the entire cake with remaining whipped cream. Keep berries neatly aligned for a crisp flag look.
  12. Refrigerate the cake for at least 1 hour to let the frosting set and flavors meld. Slice carefully to reveal the flag pattern inside.

Notes

Use room temperature ingredients for better batter consistency. Do not overmix after adding flour to avoid a dense cake. Chill whipped cream bowl and beaters before whipping. Arrange berries carefully for the flag effect. Drain cottage cheese well to avoid watery batter. Cake layers can be baked in batches if you don’t have three pans. Frozen berries can be used if thawed and patted dry. For dairy-free version, substitute milk with almond milk and use coconut cream for whipping.
