  • 1.5 lbs beef chuck or stew meat, cut into bite-sized pieces
  • 4 cups low-sodium beef broth
  • 1/3 cup low-sodium soy sauce or tamari
  • 2 tablespoons hoisin sauce

  • 4 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon brown sugar
  • 2 tablespoons rice vinegar
  • 4 packages ramen noodles, discard seasoning packets
  • 1 cup shredded carrots
  • 1 cup sliced mushrooms
  • 1 cup spinach
  • Optional toppings: soft-boiled eggs, green onions, sesame seeds, sriracha

Instructions

  1. Trim excess fat from the beef and cut into bite-sized cubes. Set aside.
  2. In the slow cooker, combine beef broth, soy sauce, hoisin sauce, sesame oil, minced garlic, grated ginger, brown sugar, and rice vinegar. Stir to mix.
  3. Add beef cubes to the slow cooker, ensuring they are fully submerged in the liquid. Cover and cook on low for 7-8 hours or high for 4-5 hours until the beef is tender.
  4. About 30 minutes before the beef is done, cook the ramen noodles according to package instructions. Drain and set aside.
  5. Shred the cooked beef in the slow cooker using a fork. Add shredded carrots, sliced mushrooms, and spinach. Stir and cook for 10-15 minutes to soften the vegetables.
  6. Add cooked ramen noodles to the slow cooker and toss gently to coat them in the broth.
  7. Serve hot, garnished with soft-boiled eggs, chopped green onions, sesame seeds, and sriracha.

Notes

For a cleaner broth, skim off excess fat after cooking. Add vegetables in the last 15 minutes to retain freshness and crunch. Cook ramen noodles separately to avoid mushiness.
