Ingredients

Scale
  • 1 lb Italian sausage (mild or spicy)
  • 2 apples (Honeycrisp or Fuji, peeled and diced)
  • 1 cup dried cranberries
  • 1 onion (diced)
  • 2 celery stalks (chopped)
  • 8 cups bread cubes (day-old sourdough or French bread)
  • 2 cups chicken broth
  • 4 tbsp butter (melted)
  • 1 tbsp fresh sage (chopped)
  • 1 tbsp fresh rosemary (chopped)
  • 1 tbsp fresh thyme (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your baking dish lightly with butter or oil.
  2. In a large skillet, cook the Italian sausage over medium heat until browned and fully cooked, about 8–10 minutes. Remove from the skillet and set aside.
  3. Using the same skillet, add butter and sauté the diced onion and chopped celery until softened, about 5 minutes.
  4. Add the peeled, diced apples and dried cranberries to the skillet. Cook for an additional 3–4 minutes, stirring occasionally.
  5. In a large mixing bowl, combine the sausage, sautéed veggies, apples, cranberries, and bread cubes.
  6. Pour the chicken broth over the mixture and toss gently until the bread is evenly moistened.
  7. Season with fresh sage, rosemary, thyme, salt, and pepper. Mix everything together thoroughly.
  8. Transfer the stuffing mixture to your prepared baking dish. Cover with aluminum foil and bake for 25 minutes.
  9. Remove the foil and bake uncovered for an additional 15–20 minutes, or until the top is golden brown and slightly crispy.
  10. Remove from the oven and let the stuffing cool for 5 minutes before serving.

Notes

For a gluten-free version, use gluten-free bread cubes. For a dairy-free version, substitute butter with olive oil. Toast bread cubes if not stale for better texture.
