Savory Loaded Queso Fundido with Chorizo

A quick and easy cheesy dip featuring spicy chorizo and a blend of melty cheeses, perfect for parties and cozy gatherings.

  • 8 ounces Mexican-style fresh chorizo, casing removed
  • 1 cup shredded Oaxaca cheese (or mozzarella for a milder stretch)
  • 1 cup shredded Monterey Jack cheese
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 fresh jalapeño, seeded and chopped (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • A handful fresh cilantro, chopped
  • 1 teaspoon fresh lime juice (optional)
  • Freshly ground black pepper to taste
  • Tortilla chips or warm flour tortillas for serving

Instructions

  1. Preheat your broiler to high and position the oven rack about 6 inches from the heat source.
  2. Cook the chorizo in a skillet over medium heat, breaking it up with a spatula. Cook for 6-8 minutes until fully browned and crispy bits form. Drain excess grease if needed.
  3. Push the chorizo to one side of the skillet, add olive oil to the empty side, then add diced onion, minced garlic, and jalapeño. Sauté for 3-4 minutes until softened and fragrant.
  4. Sprinkle smoked paprika over the mixture and stir well. Add freshly ground black pepper to taste and mix to combine flavors.
  5. Evenly spread shredded Oaxaca and Monterey Jack cheeses over the chorizo and veggies in the skillet without stirring.
  6. Place the skillet under the broiler and cook for 3-5 minutes until the cheese is melted, bubbly, and golden brown. Watch closely to avoid burning.
  7. Remove from oven and sprinkle chopped cilantro and fresh lime juice over the top. Let sit for 1-2 minutes before serving.
  8. Serve warm with tortilla chips or warm flour tortillas.

Notes

Use freshly shredded cheese for better melting and browning. Watch the broiler closely to prevent burning. Drain excess chorizo grease to avoid a greasy dip. For a cheesier top, add extra cheese halfway through broiling. Vegetarian and dairy-free substitutions are possible.
