Quick and easy low-carb steak bites cooked in garlic butter, perfect as a savory snack or appetizer for keto diets.

  • 1 pound beef sirloin steak, trimmed and cut into 1-inch cubes (preferably grass-fed)
  • 3 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon salt (sea salt or kosher salt preferred)
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Trim any excess fat and pat the sirloin steak dry with paper towels. Cut into 1-inch cubes ensuring they’re roughly the same size for even cooking.
  2. Season the steak cubes with salt, black pepper, smoked paprika (if using), and a pinch of red pepper flakes. Let them rest for 5-10 minutes at room temperature.
  3. In a small bowl, combine softened unsalted butter with minced garlic and chopped parsley. Mix until well incorporated and set aside.
  4. Heat a heavy skillet or cast iron pan over medium-high heat. Add olive oil and heat until shimmering but not smoking, about 2 minutes.
  5. Add steak cubes in a single layer without overcrowding the pan. Sear without moving for 2-3 minutes per side until deeply browned and caramelized. Cook to desired doneness (medium-rare to medium recommended).
  6. Lower heat to medium-low and add the prepared garlic butter to the pan. Stir gently to coat all steak bites evenly.
  7. Cook for another 1-2 minutes until garlic is fragrant but not burnt. Remove from heat immediately.
  8. Transfer steak bites to a warm plate and garnish with extra fresh parsley. Serve hot.

Notes

Pat steak cubes dry before cooking to ensure a perfect sear. Do not overcrowd the pan to avoid steaming. Add garlic butter near the end to prevent burning. Let steak rest if cooking in batches. For dairy-free, substitute butter with ghee or coconut oil.
