  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 medium bell pepper, diced (red or green)
  • 1 cup (240ml) chopped tomatoes, canned or fresh
  • 2 tablespoons tomato paste
  • 2 tablespoons taco seasoning (chili powder, cumin, smoked paprika, oregano, salt, pepper)
  • 1 cup (about 100g) shredded cheddar cheese
  • ½ cup (120ml) sour cream
  • Handful fresh cilantro, chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: dice the onion and bell pepper, mince the garlic cloves, and shred the cheese if needed (5-7 minutes).
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add chopped onion and bell pepper; sauté until softened and fragrant, about 3 minutes. Add garlic and cook for 30 seconds, stirring constantly to avoid burning.
  3. Add ground beef to the skillet. Break it up with a spatula and cook until browned all over with no pink remaining, about 6-8 minutes.
  4. Stir in tomato paste and chopped tomatoes. Let simmer gently for 2 minutes to combine flavors.
  5. Sprinkle taco seasoning evenly over the beef mixture. Stir well to coat and season with salt and pepper to taste (1-2 minutes).
  6. Lower heat to medium-low. Sprinkle shredded cheddar cheese evenly over the skillet. Cover loosely with a lid or foil and let cheese melt for 2-3 minutes until gooey.
  7. Serve topped with dollops of sour cream and chopped fresh cilantro if using.

Notes

If skillet seems dry after adding tomatoes, splash in a little water or beef broth to keep it juicy. For extra crispy edges, finish under the broiler for 1-2 minutes, watching closely to avoid burning. Use fresh garlic cloves for best flavor. Season beef well to avoid blandness. Cheese melts better when covered and melted slowly over medium-low heat.
