  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons avocado oil or olive oil
  • 4 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves (optional)
  • A pinch of red pepper flakes

Instructions

  1. Pat the steak cubes dry with paper towels to remove excess moisture and place them in a mixing bowl.
  2. Sprinkle salt, pepper, smoked paprika, and garlic powder over the steak bites. Toss gently to coat evenly and let rest for 5-10 minutes.
  3. In a small bowl, combine softened butter, minced garlic, chopped parsley, thyme leaves, and red pepper flakes. Mix well and set aside.
  4. Heat a cast iron skillet over medium-high heat. Add avocado or olive oil and heat until hot but not smoking (around 375°F).
  5. Add steak pieces in a single layer without overcrowding. Sear for 2-3 minutes without moving, then flip and cook another 2 minutes for medium-rare to medium.
  6. Reduce heat to medium-low, add the garlic butter mixture to the pan, and gently toss the steak bites in the melting butter for 1-2 minutes.
  7. Taste and adjust seasoning as needed. Remove from heat and let rest for a couple of minutes before serving.

Notes

Use room-temperature steak for even cooking. Pat steak dry to ensure a good sear. Avoid overcrowding the pan to prevent steaming. Use tongs to turn steak bites gently to keep juices locked in. For dairy-free, substitute butter with ghee or coconut oil. Fresh herbs can be swapped seasonally. Rest steak after cooking to retain juices. Reheat leftovers gently on stovetop, avoid microwave.
