A quick and easy savory keto brown butter glazed ham recipe that delivers rich, nutty flavor with a low-carb glaze perfect for family gatherings or weeknight dinners.

Ingredients

Scale
  • 1 fully cooked bone-in ham (68 pounds), spiral-sliced preferred
  • 6 tablespoons unsalted butter (Kerrygold recommended)
  • 3 cloves garlic, minced
  • 2 tablespoons low-carb sweetener (erythritol or monk fruit sweetener)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon ground cinnamon (optional)
  • 1 tablespoon fresh thyme, chopped (or less if dried thyme)
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Score the ham surface in a diamond pattern about ¼ inch deep.
  3. Place the ham in a roasting pan, flat side down, and tent loosely with foil.
  4. Roast the ham for 1.5 to 2 hours (10-12 minutes per pound) until internal temperature reaches 135°F (57°C).
  5. While the ham roasts, melt butter in a small saucepan over medium heat, stirring frequently until golden brown (5-7 minutes).
  6. Add minced garlic to the brown butter and sauté for 30 seconds until fragrant.
  7. Stir in low-carb sweetener, Dijon mustard, apple cider vinegar, ground cinnamon, thyme, and black pepper; mix well and remove from heat.
  8. Remove ham from oven, discard foil tent, and brush glaze generously over the surface, including scored cuts.
  9. Return ham to oven uncovered and roast for an additional 15-20 minutes, basting once halfway through.
  10. Remove ham from oven, tent with foil, and let rest for 15 minutes before slicing.

Notes

Watch the brown butter closely to avoid burning. Score the ham to allow glaze penetration. Use a meat thermometer to avoid overcooking. Baste multiple times for moistness. Rest ham before slicing. For dairy-free, substitute butter with coconut oil. Add a splash of water or broth if glaze thickens too much during final roasting.
