  • 34 pounds beef chuck roast (well-marbled for tenderness)
  • 2 cups beef broth (low sodium preferred)
  • 1 cup water
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon dried Italian seasoning blend
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1 large onion, thinly sliced
  • Salt and freshly ground black pepper, to taste
  • 12 slider buns or small Italian rolls
  • 1 cup giardiniera (store-bought or homemade, drained)
  • Provolone cheese slices (optional)
  • Butter for toasting buns

Instructions

  1. Trim any excess fat from the chuck roast and pat dry. Season generously with salt, pepper, Italian seasoning, oregano, and crushed red pepper flakes if using. Let rest while slicing onions and mincing garlic (about 10 minutes).
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast for 3-4 minutes per side until browned. Transfer to slow cooker (about 10 minutes).
  3. In the same skillet, sauté sliced onions and garlic for 3-4 minutes until softened. Deglaze with a splash of beef broth, scraping browned bits, then transfer to slow cooker (5 minutes).
  4. Add remaining beef broth and water to slow cooker. Cover and cook on low for 8 hours or high for 4-5 hours until beef is fork-tender.
  5. Remove roast and shred beef with two forks. Skim excess fat from cooking liquid and return shredded beef to slow cooker to soak up juices (10 minutes).
  6. Slice slider buns and lightly butter insides. Toast in skillet or under broiler until golden and crisp (5 minutes).
  7. Assemble sliders by piling shredded beef on bottom buns, adding provolone slice if using, topping with giardiniera, and capping with bun tops. Serve immediately (5 minutes).

Notes

Keep the slow cooker on warm during serving to keep beef juicy. Ladle cooking juices over beef if dry. Toast buns to prevent sogginess. Adjust salt carefully due to salty giardiniera. For gluten-free, use gluten-free buns or lettuce wraps. For dairy-free, omit cheese or use plant-based alternatives.
