A quick and easy side dish featuring fresh green beans pan-seared in garlic butter to develop crispy edges and rich flavor. Perfect for weeknights, holidays, or potlucks.

Ingredients

Scale
  • 1 pound fresh green beans, trimmed
  • 3 tablespoons unsalted butter, softened
  • 3 large garlic cloves, minced
  • 1 tablespoon olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Red pepper flakes, optional, a pinch
  • 1 teaspoon fresh lemon juice, optional
  • 1 tablespoon chopped fresh parsley, optional

Instructions

  1. Trim and rinse green beans under cold water. Snap or trim off the stem ends and pat dry thoroughly.
  2. Peel and finely mince 3 large garlic cloves. Set aside.
  3. Heat a 10-inch skillet over medium heat and add 1 tablespoon olive oil. Warm for 1-2 minutes until shimmering but not smoking.
  4. Add 3 tablespoons unsalted butter and stir constantly as it melts to avoid browning.
  5. Toss in minced garlic and stir for 30 seconds to 1 minute until fragrant and slightly golden, avoiding burning.
  6. Add green beans to the skillet and stir to coat evenly with garlic butter.
  7. Let green beans cook undisturbed for 2-3 minutes to develop a sear, then toss and continue cooking for another 6-8 minutes, stirring every couple of minutes until tender-crisp with browned, crispy edges. Add 1-2 tablespoons water and cover briefly if beans start to dry out or stick, then uncover and crisp again.
  8. Season with salt, freshly ground black pepper, and red pepper flakes if using.
  9. Optionally, squeeze 1 teaspoon fresh lemon juice over the beans and sprinkle with chopped parsley.
  10. Serve immediately.

Notes

Do not overcrowd the pan; cook in batches if necessary to achieve crispy edges. Pat green beans dry thoroughly to avoid steaming. Add water and cover briefly if beans start sticking or drying out. Watch garlic closely to prevent burning. For dairy-free option, substitute butter with vegan butter or coconut oil, but crispiness and flavor may vary. Frozen green beans can be used if thawed and dried well.
