  • 1 lb ground beef (80/20 lean-to-fat ratio recommended)
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 8 oz cream cheese, softened
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded American cheese
  • 1 cup chopped dill pickles
  • 2 tablespoons pickle juice
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon yellow mustard
  • Salt and pepper, to taste
  • Optional: pinch of smoked paprika or cayenne pepper

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spatula, until no longer pink, about 6–8 minutes. Drain excess fat if needed.
  2. In the same skillet, add finely chopped onion and minced garlic. Cook until softened and fragrant, about 3–4 minutes.
  3. Transfer cooked beef, onions, and garlic to the crockpot.
  4. Add softened cream cheese, shredded cheddar cheese, shredded American cheese, and chopped dill pickles to the crockpot. Stir to combine.
  5. Pour in pickle juice, Worcestershire sauce, yellow mustard, and season with salt and pepper. Add smoked paprika or cayenne if desired.
  6. Mix everything thoroughly to evenly distribute cheeses and seasonings.
  7. Cover and cook on low for 2 hours, stirring every 30 minutes to prevent sticking and promote even melting.
  8. Before serving, taste and adjust seasoning if needed. If dip is too thick, stir in a splash of milk to loosen. For thicker dip, cook uncovered for the last 15 minutes.

Notes

Soften cream cheese before adding for smoother melting. Brown beef and drain excess fat to avoid greasy dip. Stir every 30 minutes during cooking to prevent cheese from sticking and burning. Use freshly shredded cheese for best melt and texture. If dip thickens after chilling, stir in milk before reheating.
