A quick and easy dinner recipe featuring tender sirloin steak bites seared in a cast iron skillet with garlic butter and cremini mushrooms, delivering bold flavors and a perfect crust.

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 8 oz cremini mushrooms, cleaned and halved
  • 3 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp fresh thyme leaves
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Pat the sirloin cubes dry with paper towels. Season generously with salt and pepper. Let them sit at room temperature for about 10 minutes.
  2. Heat a cast iron skillet over medium-high heat and add 1 tablespoon olive oil. Heat until the oil shimmers but does not smoke.
  3. Add the steak cubes in a single layer without overcrowding. Cook for about 2 minutes per side until a golden-brown crust forms. Remove steak from skillet and set aside.
  4. In the same skillet, add 2 tablespoons butter. Once melted, add the halved mushrooms and a pinch of salt. Sauté for 5-6 minutes until tender and browned, stirring occasionally.
  5. Stir in the minced garlic and fresh thyme leaves with the mushrooms. Cook for 1-2 minutes until fragrant, being careful not to burn the garlic.
  6. Return the steak bites to the skillet. Add the remaining tablespoon of butter and gently toss everything together to coat the meat and mushrooms in the garlic butter sauce. Cook for another 1-2 minutes to meld flavors.
  7. Taste and adjust salt and pepper if needed. Sprinkle red pepper flakes if desired. Serve immediately.

Notes

Patting the steak dry before searing is essential for a good crust. Avoid overcrowding the pan to prevent steaming. Add garlic late to avoid burning. Let steak rest briefly after cooking to retain juices. For dairy-free, substitute butter with vegan butter or coconut oil.
