These savory buffalo chicken sliders combine tender shredded chicken tossed in a homemade buffalo sauce with creamy blue cheese, nestled inside soft slider buns. Perfect for game day, potlucks, or casual gatherings, they deliver a spicy, tangy, and comforting bite.

Ingredients

Scale
  • 2 cups cooked, shredded chicken breast (rotisserie chicken recommended)
  • ½ cup hot sauce (such as Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted
  • ½ cup crumbled blue cheese (Maytag recommended)
  • 12 soft slider buns or small dinner rolls (buttery brioche style preferred)
  • ¼ cup ranch or blue cheese dressing (optional, for drizzling or dipping)
  • 1 stalk celery, thinly sliced
  • 2 green onions, finely chopped
  • Salt and pepper to taste
  • Optional: pinch of garlic powder or smoked paprika

Instructions

  1. Prepare the Buffalo Sauce: In a small saucepan over low heat, melt 2 tablespoons of unsalted butter. Whisk in ½ cup of hot sauce until fully combined and smooth. Remove from heat and set aside.
  2. Shred the Chicken: Shred cooked chicken into bite-sized pieces using two forks or hands, aiming for even shreds.
  3. Toss Chicken in Sauce: Place shredded chicken in a large mixing bowl. Pour buffalo sauce over chicken and gently toss until evenly coated.
  4. Prep the Slider Buns: Slice slider buns horizontally, keeping them hinged if possible.
  5. Assemble the Sliders: Lay bottom halves of buns on a serving platter. Evenly distribute buffalo chicken over buns. Sprinkle ½ cup crumbled blue cheese over chicken. Add thin slices of celery and a pinch of chopped green onions on top.
  6. Optional Drizzle: Lightly drizzle ranch or blue cheese dressing over fillings if desired.
  7. Top & Serve: Close sliders with top buns. Optionally, wrap sliders in foil and warm in a 350°F (175°C) oven for 5–7 minutes to meld flavors and soften buns.

Notes

For dairy-free, substitute blue cheese with dairy-free cheese crumbles and use vegan butter. For gluten-free, use gluten-free slider buns or lettuce wraps. Avoid reheating assembled sliders to prevent soggy buns. Warm sliders gently to keep buns soft but not crunchy. Toss blue cheese with a bit of dressing before sprinkling if very crumbly.
