A quick and easy buffalo chicken dip combining spicy buffalo sauce, creamy cheeses, and tangy blue cheese crumbles, perfect for game day and gatherings.

  • 2 cups shredded cooked chicken (about 280g), rotisserie chicken preferred
  • 8 ounces cream cheese (225g), softened
  • 1/2 cup buffalo wing sauce (120ml)
  • 1/4 cup ranch dressing (60ml), homemade or store-bought
  • 1/2 cup blue cheese crumbles (about 60g)
  • 1 cup shredded cheddar cheese (115g), sharp or mild
  • 2 tablespoons green onions, thinly sliced (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Freshly ground black pepper, to taste
  • Celery sticks or tortilla chips, for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your baking dish with butter or non-stick spray to prevent sticking.
  2. In a medium mixing bowl, add the softened cream cheese, buffalo wing sauce, and ranch dressing. Mix well with a spatula until smooth and creamy.
  3. Fold in shredded cooked chicken, shredded cheddar cheese, garlic powder, onion powder, and freshly ground black pepper. Stir gently but thoroughly to coat evenly.
  4. Spread the dip evenly in the prepared baking dish, smoothing the top with a spatula.
  5. Bake for 20-25 minutes until edges are bubbly and the top is lightly golden.
  6. Remove from oven and sprinkle blue cheese crumbles evenly on top. Return to oven for 5 more minutes to gently melt the cheese without losing chunks.
  7. Take out the dip, sprinkle with sliced green onions for freshness, and serve warm with celery sticks or tortilla chips.

Notes

Add blue cheese crumbles at the end to keep them chunky. Use room temperature cream cheese for easier mixing. Adjust buffalo sauce amount to control heat. For a crispier top, broil 1-2 minutes watching closely. Prep ahead and bake before serving. Leftovers reheat well in microwave or oven.
