A quick and easy buffalo chicken dip combining shredded rotisserie chicken, creamy cheeses, and tangy buffalo sauce, perfect for game day or casual gatherings.

Ingredients

Scale
  • 2 cups shredded rotisserie chicken (white or dark meat)
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup buffalo sauce (e.g., Frank’s RedHot)
  • 1/2 cup blue cheese crumbles
  • 1 cup shredded cheddar cheese (sharp or mild)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons fresh chives or green onions, chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, soften the cream cheese using a hand mixer or spoon until smooth and creamy, about 1-2 minutes.
  3. Add sour cream and buffalo sauce, then mix well until fully combined and smooth.
  4. Season the mixture with garlic powder, onion powder, salt, and pepper; mix evenly.
  5. Fold in shredded chicken and shredded cheddar cheese, stirring gently to coat everything with the buffalo mixture.
  6. Transfer the mixture evenly into a 9×9-inch oven-safe baking dish and smooth the top with a spatula.
  7. Sprinkle blue cheese crumbles evenly over the top.
  8. Bake for 20-25 minutes until bubbly and lightly browned on top.
  9. Remove from oven, garnish with chopped chives or green onions, and serve warm with tortilla chips, celery sticks, or sliced baguette.

Notes

Soften cream cheese thoroughly before mixing to avoid lumps. Adjust buffalo sauce amount to control heat level. Blue cheese crumbles add signature tang and texture; substitute with feta or extra cheddar if preferred. Let dip sit 5 minutes after baking for easier serving. Can be prepared ahead by mixing all except blue cheese and baking before serving.
