Refreshing Frozen Watermelon Mint Mojito Popsicles

These adult-friendly mojito popsicles combine the cool burst of watermelon, fresh mint, lime, and a subtle sparkle of rum for a perfect summer treat that’s easy to make and refreshing.

Ingredients

  • 4 cups (600g) seedless watermelon, cubed and chilled
  • 1/4 cup fresh mint leaves, loosely packed and roughly chopped
  • 1/4 cup fresh lime juice (about 2 medium limes)
  • 1/3 cup (80ml) white rum
  • 1/4 cup (60ml) simple syrup
  • 1/4 cup (60ml) cold water
  • Optional: 1/4 cup (60ml) sparkling water

Instructions

  1. Cube about 4 cups (600g) of chilled, seedless watermelon and place it in the blender.
  2. Roughly chop 1/4 cup of fresh mint leaves and add them to the blender with the watermelon.
  3. Add 1/4 cup (60ml) fresh lime juice and 1/4 cup (60ml) simple syrup to the blender.
  4. Pour in 1/3 cup (80ml) white rum and 1/4 cup (60ml) cold water.
  5. Blend everything on high for about 1 minute until smooth, resulting in a vibrant pink liquid with tiny green specks from the mint.
  6. Optional: Pour the mixture through a fine mesh strainer into a bowl to remove pulp for a smoother popsicle.
  7. Carefully pour the mixture into popsicle molds, leaving a little room at the top for expansion when freezing.
  8. Insert sticks into the molds and freeze for at least 4-6 hours, ideally overnight, until firm.
  9. To unmold, run warm water briefly over the outside of the molds and serve immediately or keep frozen for up to 2 weeks.

Notes

Use chilled ingredients for best texture. Adjust rum quantity carefully to avoid popsicles freezing too hard or too soft. Straining is optional depending on desired texture. Let popsicles sit at room temperature for 1-2 minutes before unmolding for easier removal. Store in airtight container up to two weeks, best consumed within one week for freshest flavor.
