A quick and easy tropical mocktail with vibrant blue color, combining pineapple juice, blue curaçao syrup, coconut cream, and sparkling water for a refreshing summer drink.

Ingredients

Scale
  • 1 cup (240 ml) pineapple juice (fresh or store-bought)
  • 1/4 cup (60 ml) blue curaçao syrup (non-alcoholic)
  • 2 tablespoons (30 ml) coconut cream (canned recommended)
  • 1 tablespoon (15 ml) fresh lime juice
  • 1/2 cup (120 ml) sparkling water or club soda
  • Ice cubes
  • Pineapple wedges or maraschino cherries for garnish (optional)

Instructions

  1. Chill your serving glass in the fridge or freezer for about 10 minutes.
  2. In a cocktail shaker or mixing glass, combine pineapple juice, blue curaçao syrup, coconut cream, and fresh lime juice.
  3. Shake vigorously for 15 seconds until the coconut cream is well incorporated and the mixture is smooth. Alternatively, stir vigorously with a long spoon until creamy and uniform.
  4. Fill the chilled glass about halfway with large ice cubes.
  5. Strain or carefully pour the mixed mocktail over the ice, filling about three-quarters of the glass.
  6. Slowly add chilled sparkling water or club soda to top off the drink, preserving the fizz.
  7. Garnish with a pineapple wedge or maraschino cherry on the rim. Optionally add a small sprig of mint.

Notes

Use fresh lime juice for best flavor. Chill ingredients and glass beforehand to keep the drink crisp. Shake well to avoid clumps of coconut cream. Add sparkling water last and gently to preserve fizz. For a lighter version, substitute coconut cream with coconut water. The base mix can be prepared up to 24 hours ahead without sparkling water; add sparkling water and ice just before serving.
