  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 cup (60g) all-purpose flour
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1/2 cup (120ml) heavy cream
  • 8 oz (225g) white chocolate, finely chopped
  • 1/4 cup (60ml) strawberry puree (fresh or frozen strawberries, blended)
  • Optional: Pink food coloring for a vibrant hue

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper, leaving enough overhang to lift the brownies out later.
  2. In a medium bowl, whisk together melted butter and sugar until smooth. Add the eggs one at a time, whisking well after each addition. Stir in vanilla extract.
  3. Sift in the cocoa powder, flour, and salt. Fold the dry ingredients into the wet mixture until just combined—don’t overmix!
  4. Pour the batter into the prepared pan and spread it evenly. Bake for 20-25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Let cool completely.
  5. Heat the heavy cream in a small saucepan over medium heat until just simmering. Remove from heat and pour over the chopped white chocolate in a heatproof bowl.
  6. Let the mixture sit for 2-3 minutes, then stir until smooth. Add the strawberry puree and mix well. If desired, add a few drops of pink food coloring.
  7. Spread the strawberry truffle mixture evenly over the cooled brownie base. Refrigerate for at least 2 hours or until set.
  8. Slice into squares and serve chilled or at room temperature. Enjoy!
