Ingredients

  • Pizza dough (store-bought or homemade)
  • Fresh pumpkin, peeled and diced
  • Gouda cheese, shredded (smoked or regular)
  • Olive oil
  • Garlic, minced
  • Fresh sage leaves
  • Red onion, thinly sliced
  • Salt
  • Pepper
  • Optional: Crushed red pepper flakes
  • Optional: Balsamic glaze

Instructions

  1. Preheat the oven to 425°F (220°C). If using a pizza stone, place it in the oven to preheat.
  2. Peel and dice the pumpkin into small cubes. Toss with olive oil, minced garlic, salt, and pepper. Spread on a baking sheet and roast for 15 minutes, or until tender.
  3. Roll the pizza dough onto a floured surface to your desired thickness. Transfer it to a parchment-lined baking sheet or preheated pizza stone.
  4. Lightly brush olive oil over the edges of the crust for golden brown perfection.
  5. Sprinkle shredded Gouda evenly over the dough, leaving a small border. Scatter roasted pumpkin, sliced red onion, and fresh sage leaves on top.
