These truffles combine crunchy salted pretzels with creamy peanut butter, coated in chocolate and finished with edible gold luster dust for a festive, celebratory treat perfect for graduations or any special occasion.

  • 1/2 cup (60g) powdered sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup (100g) crushed crunchy salted pretzels
  • 10 oz (280g) semi-sweet or milk chocolate chips or chopped chocolate
  • 1 tablespoon coconut oil or vegetable oil (optional)
  • Edible gold luster dust
  • Small brush or food-safe applicator for dusting

Instructions

  1. Crush 1 cup of pretzels into small pieces but not powder. Set aside about a tablespoon for garnish if desired. (5 minutes)
  2. In a medium bowl, combine peanut butter, powdered sugar, salt, and vanilla extract. Stir until smooth and well blended. Gently fold in crushed pretzels. (5-7 minutes)
  3. Cover the bowl with plastic wrap and chill the mixture for about 30 minutes to firm up.
  4. Scoop out portions using a small cookie scoop or tablespoon and roll into 1 inch diameter balls. Place on a parchment-lined baking sheet and chill for 15 minutes.
  5. Melt chocolate and coconut oil in a microwave-safe bowl in 20-second intervals, stirring until smooth. (3-5 minutes)
  6. Dip each peanut butter ball into the melted chocolate using a fork or dipping tool, coating fully. Place back on parchment paper. (10-15 minutes)
  7. Chill coated truffles briefly until chocolate is set but not fully hardened (about 5 minutes). Dust lightly with edible gold luster dust using a small brush. (5-10 minutes)
  8. Return truffles to the fridge to fully set chocolate and luster dust, about 20-30 minutes. Store in an airtight container.

Notes

Use firm, crunchy pretzels for best texture. If chocolate thickens, add more oil and stir gently. Dust gold luster when chocolate is slightly set for best adhesion. Chill between steps for easier handling and cleaner presentation. Store in airtight container refrigerated up to 1 week or freeze up to 2 months.
