  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (240 ml) full-fat sour cream
  • ½ cup (120 ml) whole milk, room temperature
  • ¾ cup (120 g) rainbow sprinkles
  • 8 oz (226 g) cream cheese, softened
  • ½ cup (113 g) unsalted butter, softened
  • 4 cups (480 g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch cake pan or line it with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar on medium speed until pale and fluffy, about 3 to 5 minutes.
  4. Beat in eggs one at a time, scraping down the bowl after each addition. Mix in vanilla extract.
  5. Add the dry flour mixture in three parts, alternating with sour cream and milk, beginning and ending with flour. Mix gently but thoroughly.
  6. Fold in rainbow sprinkles gently using a rubber spatula to avoid melting the sprinkles.
  7. Pour batter into the prepared pan and smooth the top. Tap the pan on the counter to release air bubbles.
  8. Bake for 35 to 40 minutes, checking at 35 minutes with a toothpick; it should come out clean or with a few crumbs.
  9. Cool the cake in the pan for 15 minutes, then transfer to a cooling rack to cool completely.
  10. For the frosting, beat cream cheese and softened butter until smooth and creamy.
  11. Gradually add powdered sugar, 1 cup at a time, beating on low speed after each addition.
  12. Add vanilla extract and a pinch of salt. Beat on medium-high until fluffy, about 2-3 minutes.
  13. Frost the cooled cake evenly using an offset spatula. For a smooth finish, dip spatula in warm water and wipe off excess before smoothing.
  14. Optionally, garnish with a few sprinkles on top.

Notes

Use room temperature ingredients for best results. Fold sprinkles gently to avoid color bleeding. Cool cake completely before frosting to prevent melting. If frosting is too soft, chill for 10 minutes before use. Sift powdered sugar to avoid grainy frosting.
