  • 1 cup (225g) unsalted butter, softened
  • 1 1/4 cups (250g) granulated sugar
  • 3 large eggs, room temperature
  • 1/2 cup (120ml) whole milk, room temperature
  • 1/4 cup (60ml) fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest (packed)
  • 2 cups (250g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup (120g) powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon milk (optional for thinning)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your 9-inch cake pan or line it with parchment paper.
  2. In a large mixing bowl, cream the butter and sugar together until light and fluffy—about 3 minutes.
  3. Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl to ensure everything is incorporated.
  4. Mix the milk, lemon juice, and zest in a small bowl. (Don’t worry if the mixture looks slightly curdled—it’s normal!)
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Alternately add the dry ingredients and the milk mixture to the butter mixture, starting and ending with the dry ingredients. Mix just until combined.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. While the cake is cooling, make the glaze. Whisk together the powdered sugar and lemon juice until smooth. Add milk, one teaspoon at a time, if you prefer a thinner glaze.
  11. Once the cake has cooled, drizzle the glaze generously over the top, letting it drip down the sides.
