  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Pour 1 cup of mixed berry juice into a small saucepan and sprinkle 3 tablespoons of gelatin evenly over the surface. Let it sit for 5 minutes to bloom.
  2. Gently warm the juice and gelatin mixture over low heat, stirring constantly until completely dissolved (about 3-5 minutes). Avoid boiling.
  3. Stir in sugar until dissolved, then remove from heat. Let the mixture cool to room temperature, then mix in ½ cup vodka gently.
  4. Divide the gelatin mixture evenly into shot glasses or molds, filling about one-third of each cup. Refrigerate for 20-30 minutes to set firmly but not rock hard.
  5. While the first layer chills, blend fresh or frozen berries with sugar, lemon juice, and water until smooth but slightly textured. Adjust sweetness to taste.
  6. Spoon or carefully pour a thin layer of the berry puree on top of the first gelatin layer. Chill again for 20 minutes to allow this layer to firm up without mixing.
  7. Repeat steps 1-3 to prepare a fresh batch of gelatin mixture for the second layer.
  8. Pour the second gelatin mixture over the berry puree layer, filling the cups nearly to the top. Refrigerate for at least 2 hours or until fully set.
  9. Garnish with a fresh mint leaf or a small berry on top just before serving.

Patience is key to prevent layers from mixing. Let each layer set firmly before adding the next. Use quality vodka for best flavor.
