Perfect Grilled Peach Cobbler with Vanilla Ice Cream

  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground cinnamon
  • Pinch of sea salt
  • 1/2 cup all-purpose flour
  • 1/4 cup rolled oats (old-fashioned)
  • 1/4 cup brown sugar, packed
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • Pinch of sea salt
  • 4 tablespoons cold unsalted butter, cut into small cubes
  • 2 tablespoons heavy cream
  • High-quality vanilla ice cream for serving
  • Fresh mint leaves for garnish (optional)
  • Extra cinnamon for dusting

Instructions

  1. Preheat your grill to medium-high heat (about 400-450°F).
  2. Cut each peach in half and remove the pit. Place peach halves in a bowl and drizzle with melted butter. Sprinkle with brown sugar, cinnamon, and a pinch of salt. Gently toss to coat.
  3. In a medium bowl, whisk together flour, rolled oats, brown sugar, baking powder, cinnamon, and salt. Add cold butter cubes and use a pastry cutter or fingertips to work butter into dry ingredients until mixture resembles coarse crumbs. Drizzle in heavy cream and stir just until mixture comes together. Refrigerate while grilling peaches.
  4. Place peach halves cut-side down on grill grates or in a grill basket. Cook for 3-4 minutes without moving. Flip carefully and cook for another 2-3 minutes on the skin side.
  5. If using a cast iron skillet, transfer grilled peaches to the skillet cut-side up. Spoon cobbler topping evenly over each peach half, pressing gently into a mound.
  6. Close grill lid and cook for another 8-10 minutes, until topping is golden brown and peaches are bubbling and soft.
  7. Remove from grill and let rest for 5 minutes.
  8. Serve warm with a generous scoop of vanilla ice cream. Garnish with fresh mint and a dusting of cinnamon if desired.

Notes

Don’t skip the resting step—it allows the peaches to set. Keep the topping cold until ready to use. Watch grill temperature to prevent sugar from burning. For best results, use ripe but firm peaches.
