  • 1/4 tsp cream of tartar
  • 1 tsp vanilla extract
  • 1/2 cup (50g) popping candy
  • Edible gold luster dust, as needed

Instructions

  1. Preheat your oven to 200°F (93°C). Line two baking sheets with parchment paper or silicone mats.
  2. Separate 4 large egg whites into a clean, dry bowl, ensuring no yolk is included. Let come to room temperature for about 15 minutes.
  3. Using an electric mixer on medium speed, whip the egg whites until frothy. Add 1/4 tsp cream of tartar to stabilize.
  4. Gradually add 1 cup (200g) granulated sugar one tablespoon at a time while increasing mixer speed to high.
  5. Whip until stiff peaks form, about 5-7 minutes, until the meringue is glossy and smooth.
  6. Gently fold in 1 tsp vanilla extract by hand with a spatula.
  7. Carefully fold in 1/2 cup (50g) popping candy, being gentle to avoid deflating the meringue.
  8. Shape the meringue cookies using a spoon or piping bag with a star tip into small mounds or swirls about 1.5 inches (4 cm) apart on the prepared baking sheets.
  9. Bake for 1.5 to 2 hours until crisp on the outside and easily lifted from the parchment. Avoid opening the oven door during baking.
  10. Cool completely on the baking sheet. Once cooled, gently brush each cookie with edible gold luster dust.
