A quick and easy sparkling party drink that combines icy frozen berries with crisp brut champagne for a refreshing and festive slushy.

  • 750 ml (25 fl oz) champagne or sparkling wine (dry brut recommended)
  • 2 cups (300 g) frozen mixed berries (strawberries, blueberries, raspberries)
  • 2 tablespoons (30 ml) fresh lemon juice
  • 1/4 cup (60 ml) simple syrup (store-bought or homemade)
  • 1 cup (240 ml) ice cubes
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Measure out 2 cups (300 g) of frozen mixed berries and set aside.
  2. Juice 2 tablespoons (30 ml) of fresh lemon juice.
  3. Make simple syrup if needed by combining equal parts sugar and water, heating until sugar dissolves, then cooling completely.
  4. In a blender, add frozen berries, 1 cup (240 ml) ice cubes, lemon juice, and simple syrup. Pulse a few times to break down the ice and fruit.
  5. Slowly pour in 2 cups (500 ml) champagne or sparkling wine while blending on low speed to maintain bubbles.
  6. Stop blending and taste; add more syrup if sweeter taste is desired or more ice cubes for thicker texture, pulsing gently.
  7. Pour into chilled champagne flutes or stemless glasses.
  8. Garnish with fresh mint leaves and a berry or two if desired.
  9. Serve immediately for best fizz and chill.

Notes

Avoid blending champagne too vigorously to preserve bubbles. Blend in short bursts if blender heats liquids. Chill glasses before serving to keep slushies colder longer. Use frozen berries straight from freezer for best texture. Adjust sweetness after blending to taste.
