  • 1 tablespoon granulated sugar (for sprinkling)
  • 8 oz (225 g) cream cheese, softened (full-fat)
  • 1/4 cup (60 g) unsalted butter, softened
  • 1 cup (120 g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk or heavy cream (to reach desired spreadable consistency)
  • 1 cup (150 g) fresh strawberries, hulled and sliced thinly
  • 1 cup (150 g) fresh blueberries
  • 1 cup (150 g) fresh raspberries (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 12-inch round baking sheet or pizza pan with parchment paper.
  2. Roll out the sugar cookie dough into a roughly 12-inch circle about 1/4 inch thick on the parchment paper. Lightly flour hands or rolling pin if sticky. Sprinkle the top lightly with granulated sugar.
  3. Bake the crust for 15-18 minutes until edges are golden and center is set but not too dark. Remove from oven.
  4. Transfer the parchment with crust to a cooling rack and let cool completely, about 30 minutes.
  5. In a mixing bowl, beat softened cream cheese and butter until smooth and creamy (2-3 minutes). Gradually add powdered sugar and vanilla extract, whipping until fluffy. Add milk or cream as needed for spreadable consistency.
  6. Spread the cream cheese frosting evenly over the cooled crust using a spatula or back of a spoon.
  7. Arrange the fruit to resemble the American flag: create a blue square in the top left corner with blueberries (about one-third width and height), arrange sliced strawberries in horizontal rows for red stripes, and leave frosting visible between strawberry rows for white stripes or use raspberries as a red accent.
  8. Garnish with fresh mint leaves if desired. Chill the fruit pizza in the refrigerator for at least 30 minutes before slicing.
  9. Slice into wedges and serve chilled.

Notes

Cool the crust completely before frosting to prevent melting. Pat fruit dry before arranging to keep crust crisp. Use softened (not melted) cream cheese and butter for smooth frosting. Lightly flour rolling surface to prevent sticking. Chill assembled pizza before serving for best texture.
