Ingredients

Scale
  • 2 tablespoons unsalted butter (for greasing skillet)
  • 1/2 cup (113 g) unsalted butter, softened
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (110 g) packed brown sugar
  • 1 large egg, room temperature
  • 1/2 cup (125 g) natural creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 cup (120 g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups (135 g) old-fashioned rolled oats
  • 3/4 cup (135 g) mini M&Ms
  • Optional mix-ins: 1/2 cup chopped walnuts or pecans, shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C). Place a 10-inch cast iron skillet on the stovetop and melt 2 tablespoons of unsalted butter over low heat to grease the pan evenly.
  2. In a large mixing bowl, cream together 1/2 cup softened unsalted butter, 1/2 cup granulated sugar, and 1/2 cup packed brown sugar using an electric mixer or whisk for 2-3 minutes until light and fluffy.
  3. Beat in 1 large egg and 1/2 cup creamy peanut butter until smooth. Stir in 1 teaspoon vanilla extract.
  4. In a separate bowl, whisk together 1 cup all-purpose flour, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
  5. Gradually add the dry ingredients to the wet batter, folding gently until just combined. Avoid overmixing.
  6. Fold in 1 1/2 cups old-fashioned rolled oats and 3/4 cup mini M&Ms.
  7. Spread the dough evenly in the prepared skillet, pressing lightly to fill the pan.
  8. Bake in the preheated oven for 20-25 minutes until edges are golden brown and crisp, and the center is set but still soft.
  9. Let the cookie cool in the skillet for about 10 minutes before serving.

Notes

Use room temperature ingredients for best texture. Greasing the skillet with butter is key for crispy edges. Avoid overbaking to keep the center soft and chewy. Warming peanut butter slightly helps it blend smoothly. For gluten-free, substitute flour with gluten-free baking flour. For dairy-free or vegan, use plant-based butter and vegan egg substitutes.
