Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Shred the zucchini using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel and squeeze out excess moisture.
  3. In a large bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt, breaking up any lumps.
  4. In a separate bowl, combine granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth and slightly fluffy, about 2 minutes.
  5. Pour the wet mixture into the dry ingredients and fold gently with a spatula until just combined. Avoid overmixing.
  6. Fold in the shredded zucchini and melted dark chocolate (if using). Then fold in the semi-sweet chocolate chips evenly.
