Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5-inch loaf pan or line it with parchment paper for an easy release.
  2. Grate the zucchini using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel and squeeze out as much excess moisture as possible.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon. Set aside.
  4. In a medium bowl, whisk granulated sugar, brown sugar, and vegetable oil until well combined. Add eggs one at a time, beating after each addition. Stir in vanilla extract.
