  • ½ cup (120ml) cream soda
  • ½ cup (120ml) milk (whole or 2%, room temperature)

  • 2 cups (240g) powdered sugar
  • 3 tbsp heavy cream
  • 1 tsp vanilla extract
  • 1 tbsp butterscotch sauce
  • ½ cup (100g) granulated sugar
  • ¼ cup (60ml) heavy cream
  • 2 tbsp unsalted butter
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, use an electric mixer to beat the softened butter and brown sugar until light and fluffy (about 2 minutes).
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry mixture to the wet mixture, alternating with the cream soda and milk. Start and end with the dry ingredients. Mix until just combined; don’t overmix.
  6. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  7. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely before frosting.
  8. Beat the butter until creamy, then gradually add the powdered sugar. Mix in the heavy cream, vanilla extract, and butterscotch sauce until smooth. Pipe or spread the frosting onto the cooled cupcakes.
  9. In a small saucepan, heat the sugar over medium heat until it melts and turns golden. Slowly whisk in the cream, followed by the butter and salt. Let cool slightly before drizzling over the frosted cupcakes.
  10. Drizzle the cooled caramel over the frosting for that perfect finishing touch. Serve and enjoy!
