  • 3 cloves garlic, minced

  • 1 cup heavy cream
  • ½ cup chicken broth (low sodium preferred)
  • 1 teaspoon fresh thyme, chopped (optional)
  • 1 teaspoon freshly squeezed lemon juice
  • 1 tablespoon butter

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper. Let them sit at room temperature for about 10 minutes.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat until shimmering (about 2-3 minutes). Place the chops in the pan without overcrowding and sear for around 4 minutes per side until golden-brown. Add an extra minute per side if chops are thicker than 1 inch.
  3. Transfer the seared chops to a plate and tent loosely with foil to rest.
  4. Lower heat to medium. Add 1 tablespoon butter to the skillet. Once melted, add minced garlic and sauté for about 30 seconds until fragrant but not browned.
  5. Pour in ½ cup chicken broth and stir, scraping browned bits off the bottom. Let simmer for 2 minutes to reduce slightly.
  6. Stir in 3 tablespoons Dijon mustard, then pour in 1 cup heavy cream. Mix gently and let sauce simmer for 3-4 minutes until thick enough to coat the back of a spoon.
  7. Stir in 1 teaspoon fresh lemon juice and 1 teaspoon chopped thyme. Taste and adjust seasoning with salt and pepper if needed.
  8. Nestle pork chops back into the sauce, spoon some over the top, and cook for an additional 2-3 minutes on low heat to warm through and marry flavors.
  9. Plate the chops, drizzle with extra sauce, and garnish with a sprig of thyme if desired.
