  • 3 tablespoons fresh lemon juice (from 1 large lemon)
  • Lemon zest from 1 lemon
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon kosher or sea salt
  • 1/2 teaspoon dried oregano (optional)
  • 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together lemon juice, lemon zest, olive oil, minced garlic, salt, black pepper, dried oregano, and melted butter until well combined.
  3. Pat chicken breasts dry with paper towels to remove excess moisture.
  4. Place chicken breasts in the bowl with marinade and toss to coat evenly. Let sit for at least 15 minutes or up to 1 hour in the fridge.
  5. Arrange chicken breasts in a single layer in a baking dish or rimmed baking sheet. Spoon any leftover marinade over the top.
  6. Bake uncovered for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Remove from oven and let rest for 5 minutes before slicing.
