  • 2 ripe bananas, mashed
  • 1 cup cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/4 cup crushed pineapple, drained
  • 10 spring roll wrappers
  • Vegetable oil for deep frying
  • Powdered sugar for dusting (optional)

Instructions

  1. In a mixing bowl, mash the bananas until smooth. Add the softened cream cheese, sugar, and crushed pineapple. Stir until well combined.
  2. Lay a spring roll wrapper flat on a clean surface. Place about 2 tablespoons of filling near the bottom corner of the wrapper. Fold the corner over the filling, roll tightly, and fold in the sides as you go. Seal the edge with a dab of water.
  3. In a saucepan or deep fryer, heat the vegetable oil to 350°F (175°C). Make sure it’s hot enough to crisp the wrappers but not burn them.
  4. Carefully place the rolled lumpia into the hot oil. Fry for about 2-3 minutes on each side, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  5. Dust with powdered sugar if desired and serve warm.

Notes

Cover unused wrappers with a damp towel to prevent drying out. Use a thermometer to maintain oil temperature at 350°F for crispy results. Fry in small batches to avoid soggy lumpia.
