These gooey cookie bars combine buttery cookie dough, rich caramel, and melty chocolate for an indulgent dessert that’s quick and easy to make.

  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 1 cup caramel sauce
  • 2 tablespoons heavy cream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish lightly with butter or cooking spray.
  2. In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until fluffy (about 2-3 minutes). Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
  4. Spread half the cookie dough evenly into the greased baking dish. Use a spatula or clean hands to press it down into a smooth layer.
  5. In a small bowl, mix the caramel sauce with heavy cream (if using) to make it extra gooey. Pour the caramel evenly over the cookie dough layer.
  6. Drop small spoonfuls of the remaining cookie dough over the caramel layer and gently spread it out, leaving some caramel peeking through.
  7. Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the edges are set. The center will still look slightly underdone—that’s what makes them gooey!
  8. Let the bars cool completely on a wire rack before slicing into squares.
